Every January we eat our way around Puerto Vallarta. It is one of our favorite pastimes. We have some favorite restaurants to which we return every year. Others, we try for the first time. We tried COExist because of a recommendation and then ate there three times in one week. I hesitated giving five stars because I don't consider this fine cuisine. It is more like a home-cooked meal. For what it is, it certainly rates in the top of its category, hence the five stars. The location is not the easiest to find, but it is only a couple of blocks off the malecon (the waterfront walkway). Actually, the hotel that surrounds it could be a discovery of its own. The whole theme of the COExist movement is one of reconciliation and peaceful coexistence. The walls are filled with posters and artwork expressing this theme. That alone is a good reason to support it. You will be glad you did. One caveat. I'm glad they have clean restrooms, but if you are seated in the outside patio, get a table away from the building to avoid smelling ammonia fumes.
