Jane's casual but enlightening class was definitely a highlight of our week-long trip to Huatulco. We were whisked away from our resort to a small hillside village off in the countryside, where Jane has built her lovely open-air cooking school. During the morning our small group worked together to make tamales, empanadas, a delicious jicama salad and festive drink: all themed for a festive meal that could be scaled up for a crowd. We learned about Mexican and Oaxacan cuisine as influenced by colonial history and about local people and their way of life, all through Jane's personal lens and love for Mexico. Then we took our dishes to the big table on the terrace for lunch! Thanks so much to Jane and her assistant for a fascinating and memorable experience.
