During our trip to GCI, we stayed at the Ritz and had dinner at their signature restaurantt, Blue (which as long as you don't mind spending $300 to $500 for a couple, is a great experience). The next evening we ate at Agua. Had the sampler ceviche and the Asian Short Ribs as our openers. The Mahi Mahi was fresh and slightly sweet. My wife had the Swordfish, also very good. The price tag here is less than half that of Blue, and while the experiences and presentations are much different - Agua is much more casual - the quality of the ingredients feel the same to me. Nice wine list.
