Fresh seafood, super friendly staff, yummy food, crystal clear water, sunny day! Whatever else could we ask for. I love the caribbeans

We were very surprised how much St. Martin has recovered...at least visually. The people of island are to be commended. Baie Rouge and Chez Raymond are back and ready for visitors. The food is good as before and the beach is pristine. I did a fair amount of snorkeling and saw very few remnants of hurricane debris, at least at 10 feet and shallower. Chez Raymond is open for business and is much like it always was except for repaired structure.

Post-Irma we ventured over from the Dutch side for lunch, The scene at Chez Raymond was a little surreal - beautiful empty beach, cloudy sky, breezy, and plastic chairs and tables looking forlorn in the sand. We were early and there was no-one else in sight except for a couple of restaurant staff. We got menus and ordered drinks which came promptly. The menus appear to have been purely for show as Raymond sat down with us and told us what he had available - basically, freshly caught fish. My husband and I both ordered the fish knowing it was whole and would have lots of bones but not knowing what kind of fish we'd be getting. Our daughter, a vegan, asked lots of questions about how things were cooked and Raymond immediately understood the situation and made viable menu suggestions for her. This is not most vegans' experience so she was very pleased. When the fish came (and we still don't know what it was), it was perfectly cooked, easily the best-cooked fish we'd had during our stay, clearly fresh, and the bones didn't matter! The rice and beans, the plantains and the salad were all just right. The vegan enjoyed her food, had enough to make her feel full, and was grateful that Raymond steered her away from the french fries that had been her go-to the rest of the vacation. The service was a little slow but this is a beach restaurant after all. We relaxed and enjoyed the experience. This was a wonderful last day lunch and we will definitely return.

We came to this beach bar several times during our stay on St Martin. We never had food, but we had cocktails and they were great and good value especially during happy hour. Lovely beach, not overcrowded. Difficult to find but down a private road and is well worth the visit to baie rouge. If the sea is not rough, recommend swimming to the right to a another little beach where there is an arch to swim through.

My wife and I rented the bar in Baie Rouge for a group of 50 people on a Friday night and we couldn't have asked for a better experience!
Tatiana (Raymond's daughter) and her crew served us awesome cocktails and delicious local food (accras, barbecue), always with a great smile. We stayed way longer than we were supposed to but she didn't mind and made sure that everyone was having a great time.
Plus the spot on Baie Rouge is perfect, it's hard to find a better place on the island to enjoy the sunset!
