Description: Perched high up between the Piton mountains, The Boucan Restaraunt is open to both residents and non residents. Boucan is The Hotel Chocolat’s own restaurant, where guests can experience Cacao Cuisine. The word “Boucan” refers to the traditional West Indian name for a cocoa drying facility. The restaurant is built on the site of the Rabot Estate’s original Boucan. Boucan is also linked to “boucaneer” or “buccaneer,” the local pirates that would smoke and dry their food to preserve it for long trips at sea. The Boucan offers a strong connection with cacao and chocolate. For over 3,000 years, cacao has been used as a savory ingredient and for 500 as a sweet ingredient. The menu explores both, with the chefs taking their inspiration from the fresh cacao growing all around the estate, together with amazing local fish and seafood, salad leaves, vegetables and plentiful fruit. However the cuisine is far from cocoa heavy. The menu often makes use of cacao as a light, subtle spice or as an infusion. The desserts make full and imaginative use of the estate cacao, with each evening meal rounded off with the day’s new chocolate creation. Boucan’s breathtaking minimalist design includes a soaring roof inspired by the shape of the cacao tree, with its branches reaching to the sky, and shaded by the lush rainforest canopy. Its high platform is a centre stage for the Big Nature views all around.Dining at the Hotel Chocolat's Boucan Restaurant, whether it be breakfast, lunch, dinner or the fabulous sundowner cocktails, is an experience to be shared and cherished.We passionately believe we are certainly offering something very different at Boucan. If you want to get out, this is a nice, upscale menu with a focus on uses of chocolate in all the various dishes. Cute decor. Wonderful views and save room for dessert. They desserts are artfully presented.

Last week while on vacation in St. Lucia we had dinner at Boucan. We were staying at Ladera just across the street and stopped in at the restaurant during the day. We were excited about the addition of chocolate to all of their dishes.
Upon arriving we were seated in the lounge area even though three quarters of the restaurant was empty. We were not asked if we wanted to have dinner directly. We were given menus which we browsed but seemed to wait about 10 - 15 minutes to order a drink (again there was no one else in the lounge area).
When we were taken to our table the lounge waiter showed us a row of tables near the kitchen and the reception area. I found this a bit odd because there were a lot of tables available in the middle row and a table near the edge of the balcony.
We chose a table near the reception area as we did not want to sit near the busy kitchen area. We had already looked at the menu while drinking our cocktails and were ready to order. It was another 10 minutes or so before our waitress came over to take our order. She did not introduce herself and she didn't seem very happy about being there (no smile, no "how are you this evening").
She took our order and our dinner was good. The citrus salad was especially delicious. My husband order the angus beef which he reported was delicious. I ordered the Doral with creamed leeks. The Doral was tasty but a bit dry. The leeks were very good. The molten lava cake I ordered was superb but my husband's Piton desert was what it claimed to be - like soup - not very appetizing and more like something you might see at Denny's. At one point my husband ordered another glass of wine. My glass was almost empty but the waitress just walked away without even asking me if I would like a glass as well.
The food was good but not what we would expect for a $35 for each entree. I have had better food at lesser restaurants. The real disappointment was the staff. There was no lack of staff. In fact some of them were just standing around chatting to each other. At one point our waitress skipped around the corner with the bartender and they were laughing and fooling around behind the wall near the bar.
None of the staff seemed truly interested in whether we were enjoying ourselves or not. We were very disappointed and would not recommend Boucan or return. Dasheene at Ladera was a much more pleasant experience.

Well, pleased that you found most of our dishes ‘especially delicious’ , ‘delicious’ ‘very good’ and ‘superb’ but apologies regarding the service. This is very uncharacteristic of Boucan and we have analysed the evening to see what could have happened. Please rest assured that fabulous service is a key part of our experience at Boucan and we are committed to making it like this every time.

We’ve dined at Boucan restaurant on three occasions.
Most people may agree that the very first time you try something, it’s always new, fresh and special so you look at everything through different lens.

Our first dinner at Boucan was simply delightful as everyone had said it would be. We were just blown away by so many things….the setting, the originality of the menu and the drinks specials, the service and of course the cacao-infused foods.

On our second visit, we tried some different items on the menu and it was a mixed bag really. Our appetisers were divine but it fell short somewhat on the mains. We noticed that the service was not as sharp as before.

On our third visit, everything was just different. Our favourite appetiser, Crab terrine was removed altogether from the menu and the Mains did little to inspire us in originality or taste.
We have been disappointed by the changes but are still willing to give it another try as it is a very original concept but needs abit more attention to the menu, the presentation and the overall quality.

Thanks for your repeat visits. Its always a fine line between removing some dishes (eg Crab Terrine) to make room for new innovations eg The Boucanier’s Bouillon. The fish in our dishes also varies naturally by season, depending on the catch in the local waters. We always think the best is during the Red Snapper season but the Kingfish season is also very popular. All your comments are noted and we thank you for them

I knew Hotel Chocolat from the shops in the UK but a whole Restaurant is another world! Virtually everything on the menu has some chocolate, but not all sweet I was glad to see. Lots of bitter chocolate and chocolate nibs with meat etc. The appetizer chocolate balsamic dip with bread was delicious. The food was very good but you have to save room for dessert. The taster with 11 chocolates is more than enough to share and was fab. The setting is really lovely, on a big outside wooden deck and there was live music the night we were there. The service was a little slow and we did struggle to order wine - the wine lists were on the menu and were taken away before we could order but overall a very enjoyable experience.

Glad you enjoyed – our Chocolate Balsamic dip (complementary) seems to be the favourite of our 3 dip selection. Wine order comment, noted thanks, will discuss with the team.

We had lunch included in our our package. We both had the burger which was served in a cocoa nib bun with cocoa in the meat topped with cheese and bacon. It came with a side salad with white chocolate dressing and fried plantain crisps which were really tasty. We then had a fruit salad with melted chocolate to dip it in and a espresso mousse which looked heavenly ! We we given water and fresh grapefruit juice.

Overall the meal was excellent !!

Thanks – our Cocoa Pod hamburger buns are hand-shaped like the pods growing on the estate and baked freshly in the chefs' kitchen.
