Description: To preserve the Marmalade experience at the respect of our patrons the age requirement for children is 7 years or older. Marmalade serves tasting menus only of 4,5,or 6 courses. Guests are allowed to select their own course thus creating an individualized tasting menu. Each tasting menu at the table may be different. We don't offer a Ala Carte format for dining. Dinner will take a minimum of two hours at your Leisure. Groups of 6 people or more will be invited to taste Chef's seasonal tasting menu of 15 courses. Dress appropriately please, no shorts and beach sandals in the restaurant.

Very Miami decor. On busy Fortaleza street. Open only for supper. Reservations required. Service and food excellent. Had lobster risotto and a lamb dish, both delicious. Well worth a visit.

“Precious and Upscale, But Unfortunately Average in Some Ways”

Marmalade is a very popular, upscale restaurant n Old San Juan and our dinner party was impressed in some ways but sadly disappointed in others. The hosting and seating service was quite efficient and professional. The large dining room is partitioned into various courts but the center where we sat was too brightly lit and tables were too closely arranged, completely detrimental to any potential for a romantic setting. Seating options offered were face-to-face or side-by-side, a nice touch. The waiters and servers are well-trained to recite ingredients and preparation details but seemed to be stiffly performing an over-the-top routine rather than providing friendly, personalized service. Our pre-dinner drinks were very good. The various tiers of tasting menus were interesting and were pushed by the waiter, but we opted for a la carte items. Most of our appetizers, especially the foie gras, were very good, and one - the white bean soup - was excellent. Our entrees were sadly not up to the par that this restaurant touts, especially the lamb tagine, which was missing the complexity and spice that should have been present in a good tagine sauce, and with meat that was too stringy and overcooked. Similarly, the halibut cheeks were slightly overcooked and provided very little evidence of the chorizo promised in the menu. Portions were ample. Prices were uniformly high, typical of upscale, precious restaurants, and in some cases were simply unmerited.

In summary, I agree with many other reviewers that if you limit your visit to drinks and appetizers, you may have a very pleasant experience eating at Marmalade.

“Sometimes the concierge gets it right”

So often you ask the concierge at a hotel about good restaurants and they send you to some place that makes you wonder if they are getting a kickback. But not in this case. Marmalade was simply fantastic.

We went with the five-course menu (some with and some without the wine pairings). So, we were able to select two small plates, everyone had the same middle course of their house special white bean soup, and then a big plate before dessert. Everything was really, really good. I was skeptical of the white bean soup, but it was fabulous. All of us had the yellowfin tuna for one of our small plates, but all the other small plates were great (iberico ham, ceviche, etc.). The large plates were great (2 of us got the lamb, wow!). And I highly recommend the "coffee" and donuts for your dessert -- little donuts that you dunked in a chocolate creme sauce with strawberry infusion.

The only negative about the place was that the prices for the wine were outrageous, about $20 a glass or $70/bottle.

“This had to be the best, very best food we've eating, Awesome Meal!”

My wife and I were treated like royalty, the food was to die for and yes we almost died. Thank you so much Ray and Chef Peter. We will definitely come back and i so recommend this place. I love to eat and even when I didn't feel like I had enough, here comes ray and Chef Peter to the rescue. I can't wait for them to open in Boston although I know New york will come first. Either way we will be there. Amazing dishes and the desert OH My God! Well this was the best Mother's Day gift I could of ever given to my wife. From James and Sharon, We Are Boston Strong!

Everything about Marmalade's is spectacular. Just do it!

Lucky us, we were able to snag a last minute reservation on the second of our four nights in Old San Juan. (We tried again for our final night but the restaurant was closed for a private party.)

Lucky again, chef owner Peter Schintler took our order. We had noticed him studiously walking through the restaurant observing the "action" and customer responses and guessing that perhaps he was the owner/chef. Completely unobtrusive his actions reflected his care and concern, perhaps the one reason why every aspect of this place is so well done.

Ironically, as he took our order I happened to mention our favorite California chardonnay which was not on his wine list. Voila! It just so happened he had received two bottles that day. Talk about great karma.

We travel often in the U.S., Caribbean, Canada, Europe, South America and dining well is a priority. This delightful experience makes the top five list of all time. Thank you Marmalade.
