Camaguey is almost an open air museum and declared as world heritage by UNESCO. I would recommend to stroll around without a specific plan (like in Trinidad) since, this is the city where you may find maximum amount of churches at monument status.

Also, during your promenade, don't forget to cross la Plaza San Juan de Dios toward the river, pass to the other side, keep on going through park until Plaza de la Revolucion (Those plazas are arranged after the revolution and don't keep much interest for tourists). That will make you meet a non-touristic face of Cuba ; Street vendors, Sugar cane juice squeezers, musiciens...
