As the name implies, Castel Pergine is a restaurant in a castle. The ambience, although not mediaeval, reflects the castle's character. The main room is maybe not very cosy but it is tasteful and also is part of the castle's character.
Although clearly not (yet) Michelin star cuisine, the 4 course menu we had was well done, pleasing to the eye, refined and quite tasty. For the quality, the price is surprisingly moderate (ca. 35 ear without wine if I remember correctly).
If you want to have a good meal in Valsugana this is definitely the (almost only) place to go.
