I have now stayed at the Hotel du Commerce on two occasions and both times have found the experience most enjoyable. Valerie and Jean-Michel are wonderful hosts. The minute you arrive you feel you are at home. Just don't come early, the hotel is closed in the afternoon.
The rooms are spotless with large windows and typical french "chateau" decor.
The meal at night, cooked by Jean-Michel was excellent. The trout we ate was beautifully presented and with great flavour. Local champagne nicely complements the meal and compares well with any of the big name products.
Breakfast is simple french but plentiful.

I don't know if I want to share this secret....in case I spoil it. I found this place by chance in 2006. It is run by Jean-Michel, a Frenchman who worked with the Roux brothers in England, and his English wife Val. For us Anglais who struggle with French it is ideal. Don't think it's run just for us. There is a thriving local trade that keeps them going through the year because of the excellent cuisine. The restaurant is always full of locals. It is in the Champagne district, so there is a good choice of relatively inexpensive Champagnes, plus good wine and local artisan beers. Local cheeses are a speciality too. They have their own smokery, so local smoked trout, caught in the Seine that runs through the village, is recommended, but I also had smoked ham and smoked duck. The rooms are well appointed, with high ceilings and fantastic old fireplaces and plaster work. But the real secret is JM and Val. We have been back several times and it feels like coming home. They are so friendly and welcoming, and really make you feel like one of the family. I can't think of a hotel I'd rather stay. It's a great stop on the way down south, or better still stay a few days, go to Dijon, Chablis, Essoyes, and all the local Champagne houses in the Aube valley. But don't tell anyone how great it is.....

This proved a great choice for a first stop en route to Italy, with welcoming hosts, secure parking, a quiet location, an en-suite room large enough for the three of us, and a beautifully cooked evening meal. The only drawback for us Anglais was the bolster-style pillows which we found strange and rather uncomfortable. We would not hestitate to return and would certainly recommend the Hotel du Commerce to anyone looking for a quiet hotel with excellent food at very reasonable cost.

The scenic route from Troyes to Dijon passes for a long section along the Seine valley. Parts are absolutely gorgeous. Good restaurants are rare but this one - which is also a hotel - really does the trick. Housed in a classical building everything is utterly French with French decor, French food and the best of attentive French service. You also almost feel one of the family. Just a few cardamom seeds in a salad: a real revelation.
