Private wine tasting with Christophe in the chapel at his B&B. You do not have to be a guest, but that does make it convenient after the event.

Learning about wine in a customized, personal setting from passionate experts is something every oenophile or a wine wannabe like me should experience and this is the place. Ryan led me through the vines, to the vats, and into the barrel room in a lengthy session that included numerous questions from me and thorough and accurate answers from him. Tastings of newly-fermenting must, wine straight from the barrels, and personal favorites from past vintages demonstrated the complete spectrum of their operation. Ryan didn't hesitate when I asked to experience punching down the cap, an experience that gives me a good appreciation of how much effort it takes to make wine. His explanations of their grapes, their juice, their blending, and their many lessons learned helped me understand vinification better. Joe was equally proud of their efforts. Both are quick to say that they're still learning, and I suppose most winemakers say the same, but the results prove that they've figured out most of what they need to know. The wine is good. For more than a quick museum or tasting session for tourists, seek out the O'Connell Vineyards workshop.
