Wonderful location. Bedrooms are in a separate building, newer, across the road from the original hotel where the restaurant is. Not super but comfortable enough.
We arrived towards the end of the published check-in time, about 19:30, and we had to go and find the proprietor in the restaurant. He was very flustered as he was preparing meals, and he told us off for being late!. Apparently he was running the place on his own. He was very relieved when we said we didn't want a meal, and we sat in the garden with a bottle of wine.
Breakfast was adequate, but with lots of local preserves.
When we left we drove down the Gorges du Tarn to see the bridge at Millau. Definitely worth doing.

Biggest tip - google maps takes you to a public car park in the nearest town of any size about 12 K from the hotel!! However the journey from there to the hotel is stunning )see picture.
This was an amazing find stunning location fantastic food not to be missed!
The patron was an excellent host who not only made us feel like customers to be valued but delivered the goods!
The room are across the lane from the restaurant and are clean and serviceable. We sat outside in the late sun and watched the sun set over the mountains - then it got cold!!!!

We arrived later than the regular checking time and the host was extremely flexible. Plus, our gps had a little problem to find the hotel. (It was our problem, there are signs everywhere)
Once we arrived there was nobody but we discovered later that the keeper is also the superlative chef of the annexed restaurant: he welcomed us, he cooked for us the "terroir food" and it was delicious. The cheese selection was incredible, and so was the next morning breakfast. The best brioches in the word. Litterally.
Our room was "Spartan" but welcoming, clean and functional.

Hotel was plain, very clean and catered for all our needs. The area is lovely as is the village. The real gem here is the resteraunt just across the lane from the hotel. The owners pride themselves on producing good French food at a reasonable price along with a good wine list, but go with a big appetite as the portions are huge. We had a lovely stay, shame it was for only one night.

Mont-Servy was about the only hotel open in all of Cevennes in late November and the photos did appear particularly inviting, but our experience was excellent! The owner spoke almost no English, but was very friendly and gracious. The rooms are simple but adequate, and the main reasons for staying here would be would be the location in a tiny quaint hamlet of stone buildings, the lovely countryside (even in a windstorm in November!), and the quality of the dinners and breakfasts which were a real treat.
