Sam Desteing, the relatively new owner of the Café des Alpes and its Chef, is taking the level of this restaurant up very high. I had the great luck to eat there twice in the last ten days. Once with friends and once for Valentine's Day with my husband. I am now planning another meal there (as soon as possible!)
Things were always pretty good at the Café des Alpes under Jean-Maurice Joris the former chef. But Sam has taken the cuisine to new heights. the variety of offerings is great - from soup, salads and pasta for those who have just come off the slopes (or more corerctly, from heli-skiing!) to very elaborate and well thought out menus for those of us who just want to eat.
On vVlentine's day we treated ourselves to the "Menu Gourmand". Started with a lovely amuse-bouche with rillettes de chamois, a celery soup with pignoli ice cream (!) and a bruschetta with (I think!) a foie gras.
Moved on to the first course, a "marbré" of foie gras and beautifully cooked pigeon, then the second, which was scampi and a stuffed small calamare ... stuffed wth a tiny dice of fresh vegetables, perfectly seasoned. And a lemony dressing for the dish to be added as one liked.
Main was filet de veau. It melted in your mouth and was stunningly presented. Cheese followed - all local which is really nice (!) including an excellent brébis de Verbier. Then dessert - a pear fondant which was truly fondant. I normally hate pears but this was really, really delicious!
Even though it iwas lunchtime the restaurant was almost full. And was completely booked out for the evening...
The waiter - whose name I do not know . is knowlegeablem friendly and attentive. he is also a great addition to the new team at the restaurant.
Sam currently has 16/20 in the Gault-Millau. I hope he to gets 17/20 next year. He is certainly deserving of that. In fact, in my opinion, the best this region has to offer outside of de Courten in Sierre!!
Reservations are absolutely essential. Parking on the square in front of the restaurant is usually not a problem.
