My husband and I spent a couple days at Flatt's recently and we are now counting the weeks until owner & chef Ben Flatt introduces the winter menu--because if it's anything like the fall menu, it'll be out of this world. There's a unique menu for each season, using locally-sourced ingredients prepared using traditional Noto methods with a strong Italian influence. Served up with either a local microbrew or a selection of Australian wines, it's a meal you won't soon forget. The rooms are large and comfortable, traditional Japanese inn style, tatami mat floors, and cushy futons made up for bedtime. Each of the guest rooms has a private toilet and sink area, then there is an amazing outdoor bath overlooking Toyama Bay open from spring through fall, as well as an indoor bath year round. Breakfast is also fantastic; Japanese style but again with Ben's unique flair. Finally, I can't say enough about the hosts themselves. Both Ben, originally from Australia, and Chikako, 3rd generation inn & restaurant proprietor, are warm, friendly, and very entertaining. They truly make you feel like a personal guest, which makes it very hard to leave and very easy to want to return.

Room Tip: There are just three rooms at present, one or two more on the horizon, and all with beautiful views...

My wife and I stayed at Flatts four nights at the end of a thirty day tour in Japan . I'm so glad we decided to retreat to this beautiful seaside oasis to collect ourselves before returning to the States .Ben and Chikako were exceptional host and hostess . Ben's fusion Japanese / Italian cuisine was the best food we ate in Japan and some of the best seafood we've ever eaten ; Chikako opened the riches of the Noto to us ; we picked strawberries at the Strawberry Festival , took an exploratory cruise with a local fisherman and spent an afternoon with a master lacquerware artist in Wajima . All of this and with a warmth and sense of humor that makes me think that more Aussie's and Japanese ought to tie the knot . Thanks for the memories !

Room Tip: All rooms are excellent with views of the sea .

The Noto Peninsula juts out into the sea of Japan on Honshu's west coast. Flatt's is run by Australian chef Ben and his Japanese wife Chikako as a traditional guest house, complete with bath house (outdoors, overlooking the sea) and futon beds on tatami mats. It's also a great destination for foodies where traditional Japanese cooking and recipes get a slightly western twist - except at breakfast which is an amazing Japanese feast (albeit served with the best espresso you'll find in Japan). Driving around Noto is very easy and it's relatively cheap and quick to fly there from Tokyo if you'd like to experience a rural getaway - especially if you can get an 'Experience Japan' airfare deal as a tourist. Flatt's also runs a bakery with yummy snacks and free wi-fi!
