La Silvana is situated on a hill in a Tuscan style villa which has been converted into a hotel with a large terrace boasting lovely views. Our room was quite spacious but relatively basic. A strong aircon made it for a pleasant sleeping environment despite the heat. The shower is in the bathtub but there is no shower curtain or partition which can be a nuisance. Breakfast was very nice with various local products and a fantastic Italian coffee. The best part of our one night stay was the manager Aldo. From arrival through departure he had a smile on his face, he would not even let us carry our own luggage, he stayed up until we came home late and in the morning he served a wonderful breakfast. We really felt at home with his wonderful Italian hospitality. We highly recommend this hotel.

We came with friends for our annual Christmas Day lunch and had another remarkable meal at La Sylvana. Starting with the creative and exceptionally well prepared anti pasto we moved onto two pasta courses ( the saccettini with black truffles was memorable) and a mixed grill with tagliata of veal. Aldo and Ana are such warm and hospitable hosts that any chance to dine at their restaurant is memorable. A true Puglian experience.

Came for one night and stayed for four! A wonderful hidden gem. Excellent food, service and accommodation! All local and home produced! A real authentic taste of Italy! Thank you Aldo and Anna for a wonderful stay. We will be back!

After having visited 30+ countries on 3 continents, we settled down in Locorotondo. The brit that sold us his restored trullo, intoduced us to La Silvana. After 8 years this has become our preferred place. For luncheons and to accomodate groups of visitors. The rooms are with a balcony and a great view over the Locorotondo area, and the "minareto" villa.
What is the "glory" of the Place, is what come out from Anna's and mother Rosa's hands in the citchen. Most restaurants here say they are traditional. But very few are devoted to prepare dishes, from their own produce, even from their animals. If you are able to book in advance, you might get a selection of "frutto di mare crudo" A speciality in this area. Personally we adore the raw filets of scorpion fish, as well as red oysters from Gallipoli, or mussels from Monopoli or Manfredonia.

We spent two nights here in late April, and had a very good experience. The owner Aldo was a perfect host, and the breakfast was both delicious and plentiful, with several homemade dishes and products from Aldo's farm and his hunting. The room was spacious and quiet, with a very nice balcony. The hotel is perfectly situated high up on a hill, with a great view and good possibilities for talking walks in the area. The hotel is a good choice both for couples looking for a romantic stay, for families with children and friends travelling in the area. Check it out!
