Amazing dining experience. Interesting flavours and textures combinations. Food wise, it compares very well with some other one Michelin star restaurants we have been to (I think some of them are overrated in the UK!). it might even have what it takes for a second star, as everything was well executed, appetising, with lots of flavours and on the creative side wihtout falling into molecular cuisine... the decor is beautiful and comfortable, tables well spaced. It might be missing the second star due to the service, very kind and helpful but had a few minor glitches. The wine list could do with more choice for smaller bottles or served by the glass. Also, it is a shame there is no option to have the pairing wines with the menus, there are so many exciting discoveries to make on local and spanish wines! Not a cheap one star Michelin though. One 6 course menu and one 8 course menu plus aperitif, wine and one coffee was 450EUR (and we did not splash on the glass of Krug at more than 40EUR!!)

The Restaurant Es Fum at the Hotel St. Regis Mardavall in Costa dén Blanes, Mallorca, is one of the best on the island. The Michelin-Star-Chef Thomas Kahl and his team are artists, creative and full of new ideas. Excellent service, set up and presentation. A place, that you you have to be once....

All-round excellent restaurant! Very polite and knowledgable staff who really care and seem to have a passion for their job. The food is thoughtful, pricise and extremely well exicuted. We went for the degustation menu and enjoyed every course. This is probably the only restaurant in Mallorca where you can really enjoy incredibly top ingredients cooked to perfection. It doesn't come cheap though! But if you are looking for a top gastronomic experience in Mallorca, Es Fum is hard to beat!

We thoroughly enjoyed our dinner at Es Fum. It is around 130 Euros for a 6 course meal. If you have a table on the patio, then you will have a wonderful view of the resort and the water.

Before the first course you were given a tasting of tomato in five ways, compliments of the house. Very interesting. Good use of foam and mousse.

The waiters were all very informative and answered all of our questions. They also kept up with different conversations as we asked them questions. They replenished our drinks promptly. Our first glass of champagne was a bit flat and they promptly gave us additional from a new bottle.

The food was outstanding and very creative. At the end of the courses we enjoyed a cart of desserts (truffles, etc.) Very entertaining. I also enjoyed the great variety of breads with butters and flavored salts. The waiters replenished frequently between courses.

It did take us about 2.5 hours for dinner. But then again, who wants to eat 6 plates quickly. I felt the tempo was just right -- not too fast or too slow. The restaurant was not full when we ate there so service was very impeccable.

I highly recommend this restaurant.
