“surprise in the village of Caunes-Minervois”

We arrived here at 4pm,after a long drive from the Dordogne to find that the hotel was closed between 3-5 pm.Freddie,the owner took his naps at that time,so be sure your there before or after.Waitng on the front entrance was not a problem as there was a market across the street for refreshments.The building is part of an old 16th century building that will remind you of a castle,but smaller.They have an open terrace and a dining room that is very comfortable and pleasant.Breakfast was a standard french breakfast,Freddie prepares a most exquisite meal for the evening.The room was large but average,bath below average but still had all you needed.We were there two nights and was excellent area to visit Carcassonne and vineyards.

Dear Frederic,
Thank you for your wonderful hospitality and the courtesy you extended to us as guests of Hotel d'Alibert. Yes, you are right, November cannot come too soon for you - a time for rest and recovery as it was clear you were tired after a long summer providing good food and lively conversation to your guests.
We appreciated your efforts to make us feel welcome and comfortable. That we had to enter and leave via the garage was a small inconvenience; the large room with its comfortable bed more than made up for circuitous journey from our room to the outside world, exiting through the garage each time we wished to go for one of our many enjoyable walks around the village and the surrounding countryside.
The dinner you prepared for us was excellent, albeit after arriving from Bordeaux that day the wine you chose was more robust than what we were expecting. It was interesting though.
Frederic, your table service is wonderful - you made us and the other guests feel very welcome during dinner, with lively banter and prompt service. No wonder you looked so tired the next morning! We hope you have a good rest during winter and continue providing a quintessential Languedoc-Roussillon experience. Perhaps with an assistant to help share the load....

We had dinner at Frederic's restaurant on our last trip & so enjoyed that experience, that we came back & stayed 3 nights in the hotel in September 2010. Our room was cavernous! The bathroom was 10x14 feet (as big as some hotel rooms we've had). The room itself was about 30x 30. REALLY! It had 3 beds & a sofa. 3 of us just rattled around in it. The hotel is plain from the street but had a beautiful center courtyard with a fountain and sculptures. It is a beautiful space to sip an aperitif before dinner. The food is excellent. There are some dishes for the adventurous, such as tete de veau. Frederic epitomizes panache! He is the perfect host. Caunes-Minervois is a real French village- (ie not many postcards). It is an easy drive to the walled city of Carcassonne. A little farther to the Cathar ruins of Peyrepurtuse & Queribus. The center of the Templar mystery, Rennes le Chateau is also an easy drive. We plan to go back next spring.

We stayed here on our most recent trip through France and were not disappointed. We arrived in town on a Sunday afternoon and could not find it, my mum started walking and found what we thought was the hotel, it wasn't, we somehow had arrived at Frederick's friend's house. We still cannot figure out how we ended up there but his friend called him for us and led us to the hotel! Frederick met us at the entrance to the parking garage, which is large enough for about 5 cars and is secured at all times, and let us in. As you walk out of the garage and into the hotel you are greeted by the most incredible courtyard which looks like something out of a fairy tale. The staircases which were on either side of our room were also incredible, one was wide and winding the and the other was large and steep. The room was fairly large with a huge bathroom and an old ancient door which took a few tries to figure out how to open, but once mastered you were welcomed by a large breezy room. In the morning you get to sit in the amazing courtyard and munch away on almond cakes, french baguette, jams, yogurt, cheese, fruit and coffee. Overall our stay at Hotel D'Alibert was wonderful and we will be back, this time staying on a day that the restaurant is open so we can try his wonderful food.

We stayed in Caunes-Minervois over the Easter holiday and had dinner at Hotel d'Alibert one night. Our host, Fredrick, was extremely entertaining, if not a little quirky, and the meal was very good. We allowed our host to chose a bottle of wine to accompany our dinner and he came back with an excellent wine at a reasonable price. The decor is very nice, with a large fireplace and original artwork from a local artist. We didn't stay in the hotel, but Fredrick let us take a peak at one of the rooms and if we are ever back in the area we would most definitely stay there.

Ok - everyone raves about the restaurant but really its the hotel that I loved more than anything else. It was beautiful. Caunes-Minervois is tucked just outside Carcassonne (which far too touristy of a place to stay). Caunes-Minervois, however, is a dream. It was what one thinks of when they picture a small French village (unlike provence which tourism has ravaged). Hotel d'Ailbert provides that charm one is often looking for on a trip to Southern France. It should also be noted that there is accessible secure parking at the hotel - something that is certainly valued. Anyway, I couldn't recommend a hotel higher in this region. It is the perfect romantic hideaway (and we were travellng with our infant son).
