I have been eating at Chez Frederic's (Hotel d'Alibert) for the past 14 years. The food is classic country style French. The menu doesn't change much (a few seasonal soups and desserts), but everything on the menu is excellent. During the cooler months, there is a nice fire in the dining room. When it is warm, there is dining in the outside garden area. Frederic has a fun, sarcastic sense of humor. Remember that the French do not put milk in their coffee after breakfast time, so if you ask for a cafe au lait after your lunch or dinner meal, Frederic will ask if you wish to have a croissant also. I recommend the cassoulet, if you haven't ever had this famous regional dish.

Frederic offers you a truly French evening in a wonderful setting and superb food. we suggest you wear loose fitting clothes if you don't you will have to undo a button or two.

Our only regret is that we didn't dine at Hotel d'Alibert until our last night in Caunes-Minervois, otherwise we would have gone there more.
We enjoyed the setting, the ambience, Frederic's sense-of-humour and, above all, the food. Starters: the foie gras was sublime, as was the foie gras creme brulee. Main courses: my husband ordered the duck confit which was perfect. I was quite jealous even though the lamb was delicious and the perfect portion. Next time we're in Caunes, we'll probably eat there frequently until we've had every item on the menu.
The menu itself is classic but disguised in clever French jeux-de-mots which is probably what throws some people off. Frederic is perfectly able and willing to translate any odd-sounding items.
The wine list is reasonable and includes a selection of the best of local wines. Our fixed price menu was very reasonable. I believe it was 28 or 29 euros.
We highly recommend dining at Hotel d'Alibert.

The owner obviously enjoys hosting his restaurant. Frédéric is very welcoming. The restaurant is well appointed and the food is very good however, the French menu is a little confusing and wasn't well-explained when we asked for a translation.
Although the meal wasn't quite what I thought I had ordered, the food was delicious and we had a fun night.

This is the best restaurant in Caunes-Minervois offering excellent traditional French food and value for money. The hotel dates from 1569 and in warm weather, meals are served in the Renaissance courtyard. The fixed price menu offers a wide choice of entrees, main courses and desserts. The meal also includes appetizers and a cheese course..

Caunes-Minervois is a lovely village with many ancient houses, winding narrow streets, and a famous abbey. The village is at the foot of the Black Mountains and surrounded by vineyards. There are endless opportunities for hiking and walking surrounding the village.

A meal at the Hotel D'Alibert is an unforgettable experience and not to be missed if you are visiting the Carcassonne area.
