We stayed here just one night whilst passing through but it was an excellent choice. I see most of the reviews of Pasada La Pastora are 5 star, which is why we chose to stay there and they are deservedly so. Miguel is an informative host and no effort is spared to make you welcome. He is a mine of information and I understand he organises nature tours in the area. It is fantastic countryside around the town for nature lovers so go slowly and observe.

We have recently returned to Australia after travelling through Northern Spain and we stayed for 2 nights in Uncastillo. It was so good to arrive in this historic little town & have Miguel greet us in the square, show us where to park, assist us with our luggage & provide us with a lovely cup of tea. He & Irma run a friendly, professional business & he was able to advise us where to visit, where to eat & walks to enjoy. We did not speak Spanish & his English was very good. Accomodation was spotless, the room very comfortable & ensuite perfect. I have very fond memories of our time there & when I tell people of our stay in Spain I always mention Uncastillo & Posada La Pastora (which we discovered in Alastair Sawday's book - Special Places to Stay in Spain). Breakfast was tasty & plentiful. If you want to see the "real Spain" then don't miss this place.

We enjoyed the uppermost apartment in the Posada La Pastora, in Uncastillo, a quiet medioeval village in the hearth of Aragona. The village is small but full of history: 7 churches, including 2 great cathedrals, and the ruins of a castle with 2 big towers. Do not forget to go and swim in the public swimming pool, hidden in the green and dominated by a great view of the old city.

Room Tip: Choose the Mini-suite at the uppermost 8third) floor. There is not elevator, BUT it is very spacious...

It is by far one my favorite places in the world. Uncastillo is a hidden treasure, where you can avoid tourist and crowds, a true off the beaten path jewel and the place to stay without any doubt is posada la pastora. It is just beautiful, old style Spanish decorations, outstanding local food for breakfast, the owners are the sweetest people and very knowledgeable about the area and travelling in general (ask them about their trips they are true adventurers).

The rooms were lovely so was the staff and breakfast . The breakfast was a buffet which included chorizo , yogurt, bread , homemade jam , cereals ,coffee, tea,hot chocolate but my personal favourite the sugar bread so tasty

The sweet bread you liked was called "Malhecha" (bad-made we can translate) and it is just bread, sugar and oil. Once again the more simple the best.

Our family stayed here recently and the holiday was very enjoyable. Miguel (the owner) was really helpful and made us all feel at home with his personal service, we would highly recommend this hotel. Breakfast is not to be missed, local produce served with care.

We were extremely fortunate to have New Year's Eve at Posada La Pastora. Miguel and his family only cook one meal a year for their guests and this is it. The food was locally sourced where possible, home cooked and prepared with such attention and care. Uncastillo would be wonderful at any time, but if you get the chance to be there for New Year - it is very special - a long table dinner meeting people from many places. The restaurants are closed for these few days so other very good meals are easily obtained at Sos del Rey Catolica (a village 20 mins away). This village also worth a look. Miguel and Inma are such generous and tolerant hosts.
