Simply incredible, This is the Art of grilling a steak .
Never go here if you are vegetarian ,this is a restaurant with one only option for main wich is the steak and piquillo peppers as the only garnish . It does not need anything else.
I definitly go back soon .Very soon!!!!!!!

As not a local basque, I am not fond of steaks at all and hate bloody steaks served at the cidrerías. But at this place, I enjoyed bloody steaks for the first time in my life. The word restaurant is almost exaggerating, everything is rather basic and neither replaced nor cleaned in the last 50 years. On the black dirty walls, you will see the fotos of Spanish celebrities attending the place. It is famous enough that a dependence opened up in Madrid: Casa Julian de Tolosa.

Most likely, you will not find the entrance because there are no visible signs outside - just ask some local people.

This place is amazing. The run-down entrance full of empty boxes and bottles does nothing to prepare you for the actual "dining room", which includes the charcoal chimney where the steaks are grilled to perfection, and which looks like it hasn't been cleaned once in 50 years. A thick layer of tar sits on the rows of old whiskey bottles lining the wall, the walls are pitch-black from the coal fumes. Some naked lightbulbs provide illumination. There is no menu, except for the excellent wine list. You should know what to order: for starters try the perfect Iberico ham, the Navarre asparagus, the "cogollos de tudela" (lettuce hearts), they're all excellent. And then be prepared to experience the best steak you'll ever taste. Word goes Julian controls all the aspects of the meat and its preparation, from the selection of the best animals through the cutting, to the curing conditions and finally the grilling, which you can experience firsthand (the place is really small so everybody gets to see the grill). The peppers which come with it, though, are out of this world. I have never tasted, nor even expected that such taste could be accomplished by, peppers like this. They are a culinary experience on their own, and you will never ever forget them.
This is authentic basque food: it's rough, it's extremely tasty, and it makes you want to forget all you know about exquisite cooking: foodwise, everything seems overkill and beside the point compared to this. This would be the exact opposite of Adrià's El Bulli.
If you order wine and dessert this easily becomes quite an expensive place, especially since the wine quality is very high. Expect to pay a median $140 per person with a decent wine.
