We opted to stay in Noci as a base for visiting the Valle D'Itria, and certainly glad we did. We stayed in June, so it was "off-season". The town is quite small and central. The hotel is in the heart of the old town, surrounded by little shops and restaurants.
First night we stayed in a deluxe room, then decided to upgrade for Santarosa Suite. This is certainly recommended, for a small difference, you get a spacious suite with big bedroom, HUGE bathroom and a seperate living area. It was a fantastic deal, specially we were travelling with our 1.5 yrs old son, and the hotel provided a baby-bed, so it was very practical to have him sleep in a seperate room than us. All the rooms are renovated in a very elegant manner, conserving the traditional aspect of the building and using quality material.
The breakfast was the traditional italian, has cakes, excellent jams. Only downside was that the juices were not fresh, but apart from that, the buffet was simple and tasty.
The staff are absolutely friendly. You can see limited number of people working but all very nice and provide you with loads of tips and advice.
The hotel has a restaurant, you can see it was full every night. We tried it on our last night, it wasn't anything special I have to say, plenty of other places that offer good pizza.
It's a little gem, and excellent value for the money.
