Description: ■Where Italian Meets Incredible Shonai Ingredients This Italian restaurant showed Japan that local regions such as Shonai, have incredible food hidden. Chef Okuda, who sources his ingredients daily from local producers with whom he has developed a close relationship with. Chef Okuda believes that simple cooking preparation best brings out the delicious flavors of the local ingredients. The ingredients decide the menu of the day. One day, yellowtail caught on Shonai beach becomes carpaccio. Shonai beef with locally gathered wild plants create beef tagliata the next day. Above: The restaurant’s Specialty - Fritter with the local “Gassan” bamboo shoot rolled in cured ham. The marriage of sweet bamboo and the salty ham results in an exceptional appetizer.
