Owner description: The New Forest Lodge Country Cooking School is principally about having fun. We eat local food grown on our own farm. Using traditional recipes, with wild herbs, fungi and the harvests from our organic Moorish kitchen gardens. We offer an insight into the forgotten art of cooking in brick built wood ovens and ranges. Learn to select and grill fresh fish. Enjoy a day workshop and feast on the fruits of your labours.We offer both residential holiday courses and day workshops, specialising in traditional country recipes with many vegetarian and seafood dishes as well as our signature wild game pots. Our workshops are held daily starting around 10.00am, usually finishing about 4.00pm after you have enjoyed the banquet you have helped to prepare. The country cooking workshop runs simultaneously with our riding and carriage driving workshops, so this is an ideal holiday activity for families or groups with varying interests. My partner and myself had a great day with Fran and David, and a perfect break from the beach, learning to cook in their lovely rustic kitchen. The market visit was fascinating, and how often can you say that you grilled your own fresh-caught sardines, tried (and enjoyed) Goose barnacles, and whipped up Serradura pudding! Since returning back to Canada, we've already tried a couple of the recipes - delicious - and have fond memories of the experience.

I wanted to do something different on my recent trip to Lagos Portugal area. I did some online looking and found Horses in the Sun/New Forest Lodge. What intrigued me was "a country farm ranch that offers horseback riding and a COOKING School! I Love to Cook, as does my adult son who joined me on this adventure!

So we went to Country Cooking School with Frances!
Being a Monday that we had available, the fish markets were closed, so we opted for something I enjoy even more....Rabbit! A local Favourite.
Frances is a friendly, energetic and humerous chef and runs a clean and organized kitchen. Her style is very reminiscent of my own homestyle Italian cooking ....free floating with ingredients, quantities and shifting on the fly. Basically the rough framework for the recipe is there, but subject to change on a whim of mood and availability of ingredients. This is true Homestyle Country Cooking at it's best!

We did 5 different recipes with the Fresh Rabbit. A Liver Pate stuffed Ravioli, Fried Livers and Kidneys with Onions, Rabbit Hindquarters in a Spicey Mustard glaze over Kale, Rabbit Saddles in a sweet cumquat/Honey/Orange Juice sauce, and lastly (and my Favorite!) a pulled Rabbit Risotto. This was rounded out by Salad, Fresh Veggies, Fresh Potato Bread and two fantastic deserts.

Learning to cook a new way can be intimidating, but Frances was patient and willing to allow ones own style to remain, with new suggestions on trying different things.

Come with an open mind on learning new techniques and a big appetite for what you cook and then serve to the Family and Guests!

I told my son, this is about as unique a traveling experience as you can find, staying on an historic farm ranch and learning to cook old school in a wood oven in the Portuguese countryside. This memory will surely stay with us!

I have just spent an interesting and profitable day learning the secrets of traditional Portuguese Counrty Cooking, direct from the horses mouth, so to say! Not actually from the horse, for although she shares her farm with a herd of a dozen or so really sweet horses, the head chef and workshop leader is 'Frantic Fran' a retired T.V. chef who now runs a country cooking school from the same farm where her sons operate a carriage driving and horse riding center.
I joined Fran this morning for her one day country workshop. After a facinating trip to the local fish quay we set about preparing a fantastic feast which I was to enjoy later. We picked fresh herbs from the historic kitchen gardens. We baked bread in an ancient brick built wood oven. We grilled the fresest of fish over a wood burning range.
I really learnt a lot. My friend had decided to opt for the horse riding option and when he and his fellow riders returned we all tucked into the fruits of my labours.
I shall definitely be back to stay with Frances at her farm. The Cooking Spa break seams very good value and I should love to spend longer learning Frans secrets.
I would recommend this cooking workshop to everybody.
