Went to Taos Ski Valley last season. Was wonderfully surprised at the food selection in town (German, Mexican, Continental, etc.). But our hands down favorite was The Blonde Bear.
The menu talks about "Alpine Fusion" interpreted through the laid back lifestyle Taos Ski Valley is known for. I've been to a number of European ski resorts and the Blonde Bear lives up to their claims.
Food: Delicious. A mix of Italian, French and German/Austrian dishes. The steak with Salsa Verde (mentioned previously) was cooked perfectly and the salsa gives a nice herbaceous note to the beef. Jaeger schnitzel just like "Oma" made. Don't miss the little fried meatball appetizer! The prosciutto is served with Native American fry bread - great combo and a nice local twist.
Drinks: Full cocktail bar with a surprisingly deep wine list. Their bartender is great and so friendly.
Service: Exactly what they claim - laid back and friendly. Do you really want a European style of stuffy service after a day on the slopes?
Ambience: Sleek, modern and uncluttered. The food is 5-star but the place is laid back. Good mix of visitors and locals (hey if the locals eat here it must be good). After skiing all day it's nice to not have to dress up but at the same time not have to settle for mediocre food.
Bottom Line: Loved the skiing in Taos Ski Valley so we'll be coming back out from NY this season. Once again we'll stay at the Edelweiss and once again looking forward to most if our meals at The Blonde Beat. Worth the trip!
