I don't think you will find many places closed.
We planned on doing a walking food tour of Siena through the Tuscan Wine School on All Saints day. They cancelled the tour that day because the shops they visit on the tour will be closed. So expect at least some closures. We ended up booking the class for the next day; on Friday the shops will be open as usual.
Any more info on this? Will tourist attractions (monuments and churches) and enotecas be open? I think restaurants are typically still open, right?
With the exception of some small shops aimed at local people, everywhere should be open. It's a public holiday and businesses want to capture as much business as they can. In my own small village we're having a fair and I think more places than would even be open on a regular Sunday are planning to open.
