Lechtaler Alps - questions on huts

We are a couple planning to trek from St Anton Am Arlberg through the Lechtaler Alps for 4-5 days mid September, probably finishing in Zams. We've never trekked in Austria before but have done so in France and Italy. We'd like to understand more about the Austrian mountain hut etiquette.

Do we need to book our beds in the huts or can we turn up mid-afternoon, given the season? Can we use our sleeping bags or can we only use sheet sleeping bags? Can we buy packed lunches or should be take all our lunches with us?

We're spending our first in night in St Anton, arriving on a Saturday at 17:00. Does anyone know if we'll still be able to buy provisions at that time of day?

All advice welcome!

Mid-september is actually pretty high season for hiking - if the weather is good you should prebook your stay by calling 2-3 days ahead. You only need a sheet sleeping bag - blankets are usually provided. Also provided is usually some kind of dinner and breakfast (for an extra fee). You can bring your own packed stuff but the dinner is really good for socializing.
