My family really enjoyed our Jackson trip last summer. We liked walking through the city square and going into shops. At the park we took a ferry across the lake to the base of the Tetons. It was awesome! It's almost scary how big they are up close. We hiked to a waterfall.
It's an easy drive from Jackson to Jenny Lake. Since you are with kids, I suggest you taking a round trip boat at Jenny Lake, this way, you only have to walk the trial up to Inspiration Point. It was an easy walk.
If you want to see wild animals, stay as late as 7:00pm to 8:30pm, driving along the Park road and watch out for cars that stopped/parked on the side of the road. You will not miss the bison and/or elk, with some lucks, you may see a bear or two!
PS: when you are at Jenny Lake and if your family is up to kayaking, you may want to consider doing that as well. It is very pleasant to kayak on Jenny Lake while enjoying the view of the Tetons.
Drive up to the top of Signal Mountain to watch/photograph the sunset. While we were up there, there was a "regular" who pointed out the howling of wolves in the distance. Turned out that there was a small herd of elk down below in the valley and we watched (from binoculars) a wolf stalking the elk herd. It was fascinating. It was getting pretty dark when we decided to leave so we did not witness the outcome.
We did not go into Jackson at all. We did hike the Leigh lake trail and that was fun. This lake presents a great opportunity to swim in several small beach/campsite locations along the way.
Check with a ranger on bear activity first.
Jackson is worth a visit if for no other reason than to see the elk horn arches at the square. But it's more than that. It's probably the epitome of a tony western town and a very interesting place.
