O.K. Day one- Masaya volcano, Masaya artisans' market, the mirador at Laguna Apoyo (town of Catarina) for a late lunch. Food very so-so, but go ahead anyway. Will give you some late time to explore Granada.
Day 2: Hike and canopy tour on Mombacho Volcano, then in the afternoon kayak or boat tour of Granada Isletas.
All of this is very close to Granada.
You can try Oro Travel, near the Convento San Francisco, and check out their tours and cost which by experience I know is competitive. Most of all they are reliable. They will set you up with a driver, and possibly with a group. Also Tierra Tours does a good job, I just don't have that much experience with them. email@example.com, you can also arrange airport pickup with them, should be $30 per couplel.
