I am not sure what to suggest for you. I don't go to many mud hens games. And if I do, I usually eat before I go as the food around the area can sometimes be pricey. If you decide to eat before you go and want a suggestion, please let me know.
I can make a few suggestions. There is an area downtown called the Docks. It is a beautiful setting, right on the river. My favorite restaurant there is Real Seafood, but there is an Italian restaurant called Zia's(mentioned earlier), and a Mexican restaurant called El Vaquero, which are also good.Edited: 1:16 pm, July 21, 2013

Are there any good restaurants on the Maumee River, accessible by boats coming in from Lake Erie? We will be putting in a boat from Maumee Bay State Park, and cruising the coastline during the day. We would like to stop at a restaurant in the river, if possible.
Blarney Irish Pub is close, casual, and good food.

There's a few good options that fit your criteria:
Tony Packo's is a Toledo classic, which specializes in "Hungarian" hotdogs and other foods. It's not a "Coney" as you put it, since my favorites there are the Chicken Paprikash, and Chili Mac. Their website is http://www.tonypacko.com/ if you want to look at the menu. I like the combo where I can get Chili Mac and a hot dog. Don't forget to order extra pickles if you are a pickle fan!
If it were me, I'd definitely choose Tony Packo's!
