I always arrange to have a fridge in my room. That way, I can pick up a few supplies when I arrive and have low cost breakfast, lunch, or snacks ready whenever. Because we are so busy having a great time we usually only sit down to one big meal each day, which does save us some money.

One of the easiest ways is to avoid holidays, conventions and weekends. Prices tend to be higher durring these times.

Supply and demand. When demand goes up, prices go up.

I almost always stay at Bellagio. If I am not in a suite (which comes with a fridge) they always provide me with a fridge (which has always been immaculate, by the way) at no cost. We nearly booked a room at Paris recently, and they were firm on charging me $15/day for a fridge. That plus some bad reviews made me change my mind, and now we are staying at Bellagio again.
