Sorry if this is too late to be of help, but it's really easy to go from Coral Gables to South Beach if you're near the metro, so I bet getting to Miami Beach would be easy, too. If you call the Miami Dade Transit Trip Planning Agent (305-891-3131), M-F 7AM-8PM, Saturdays 8AM-5P, closed Sundays), they'll give you great information and schedules. It's good to call ahead and plan the trip so you don't waste time because you don't know the metro and bus departure times. Also, the attendants at the metro stations are pretty helpful, too.

Rather than pay 2 one-way fares ($3 each), we got a day pass for $5. To get to South Beach, we went went north on the metro from University to Govt. Center (maybe 10 minutes, max), then crossed the street to the bus terminal (very clearly marked) and took the express bus directly to South Beach (120). We got off around 7th St., and walked two short blocks to the beach. Coming back, you just cross the street and wait at the stop that has 120 listed. There are other buses, but they take a bit longer, as they have more stops. The ride is nice and you don't have to pay to park.
