If cost is no issue, whats the best hotel/motel?

We really would like to stay ON the water. Any drive within 30-40 minutes away from Hearst Castle would be preferred.

You want the Best Western Cavalier in San Simeon. It's the only hotel ON the water. There is beach access adjacent to the property and they do bonfires at night.

There are several VERY nice ocean view inns in nearby Cambria, but none directly on the water.

Unfortunately the BW is full the night we will be in the area.

Maybe I'll call them and see if I can get a better response on the phone.

You might want to stay in Cambria, then. Moonstone Landing, Fog Catcher, Pelican Cove, BW Fireside Inn, White Water Inn, Sand Pebbles Inn all would be nice. The water is across the street and there's a nice boardwalk to enjoy the views.

If you just checked on-line at the BW website, do call them directly. Sometimes the on-line reservations are not accurate or totally up to date.
