A seven day trip from san - jose to L.A, any tips?

We are traveling on September (1st - 8th) from San-Jose to L.A. Can anyone help me planning the days, so we will not rush the whle week and enjoy. Do we have to make reservations for tose days?

Elephant Seal Beach on PCH Hwy 1 is about 7 miles north of San Simeon.

If you go to Santa Ynez and then to Cold Tavern Inn Restaurant on Hwy 154 (a once stagecoach stop) you will have side tracked from Gaviota State Beach, just at the bottom of the downhill grade of Hwy 101. Taking Hwy 246 and going 3 miles inland due east to Solvang is no big thing off the beaten path. Continuing further past Santa Ynez and then southward on Hwy 154 to Old Tavern down to Santa Barbara will take you off the beaten path and loss of at least an hours time. Hwy 154 will take you to State Street at La Cumbre Shopping Plaza down in Santa Barbara. You'll be missing out on the gorgeous ocean scenery, and more importantly the dolphins that swim 50 feet offshore from the beach at Gaviota State Beach during all times of the day and all year! Some will even jump and twirl in front of you to say hello while you're standing on the beach at watersfront! I was just there again 3 days ago... It'll bring lots of smiles to you!
