Below I have listed some things do do and see while visitiing the Gulf Shores area. Some of these things are not actually located at the gulf but you can make a good day trip out of them.
Waterville, USA offers a water park and an amusement park. However, its main operation is during the summer. Check out thier web page to find out more information:
You can go to Fort Morgan (very close). Operation Schedule: Fort open Nov. 1–Mar. 31 8–5, Apr. 1–Oct. 31 8–7; museum year-round 9–5.
Construction began 1819, completed 1834. Large brick fort serviced the Civil War, Spanish-American War and both world wars. It played a major role during the Battle of Mobile Bay (1864). Museum details fort's history.
Then after viewing the Fort jump on the ferry. (walk on or drive on: best to take care to tour other areas of the island) and head to Dauphin Island. Here is the ferry schedule:
While on Dauphin Island you can visit the aquariam,
or visit the other places that dauphin Island has to offer.
If that don't suit your fancy here are some more ideas for a day trip and/or over night.
