Is it best to take Euros or Turkish Lira?

Take a small amount of lira and the rest in sterling as you will get a better exchange rate out there. Don't bother with euros.

I agree, however it is best to change the sterling in the bank, rather than the exchange places, also don't forget your passport as that seems to be required, went I was there a couple of weeks ago the bank offered 2.90 and exchange office 2.70. Hope this helps you.

How about yen- can yen be easily exchanged away from Istanbul? As I'm living in Japan, I'd prefer not to have to change twice.
