Use your ATM card to get soles. ATMs should be easy to find in Arequipa.

You can even use the ATMs or money exchange desk (cambio) at the Lima airport. They will be open, & convenience will greatly offset any higher exchange rates.

Banks are closed on sundays but there are plenty of places to change money at the main square.

We were in Arequipa on Sunday 2 weeks ago and used Interbank Money Exchange on the plaza. Good rates; 2.81 Sol per $1. Lots of the shops and restaurants are open on Sunday. Try the ZigZag restaurant, it's great.
