"Must Try" restaurants in Singapore

Hi I am very interested in some feedback on "MUST TRY" Restaurants in Singapore - maybe ones not on the tourist trail and no particular food although of course local cuisine will be a must try! We are in Singapore for 10 nights so have the opportunity to try all types and can't wait. Thanks so much and look forward to your ideas!

1) Zam Zam (Either the Murtabak or Nasi Briyani)

2) Boon Tong Kee Chicken Rice (There are a few outlets)

3) No Signboard Seafood Restaurant (Seafood but try the chilli or pepper crab)

4) Muthu's Curry (Indian curry)

5) Ng Ah Sio Bak Kut Teh (Chinese pork ribs in soup)

6) Din Tai Fung (Chinese Dim Sum - Especially the Siao Long Pao)

I'm sure there are more but these are all that I can think of at the moment.

You may also want to check out:-

1) Lavender Food Square Centre

2) Lau Pa Sat (Try out Fatman Satay amongst other things)

3) HIll Street Tai Hwa Pork Noodles

4) Diandin Leluk Thai Rstnt Pte Ltd

These places (Except for the last one) do not have aircon but the quality of food is exceptional.

The banana leaf in little India serves amazing food

Doesn't look much when looking from theoutside in but the food is amazing

The OP is not going to Indonesia, nor Korea.

Therefore as per the OP's wish I advised on varying cuisines apart from the local cuisine. Seeing as Indian, Malay, and Chinese varities can all be considered 'local' for Singapore anyway, I think a good Korean BBQ wouldn't go amiss, and would provide something different during the OP's stay in Singapore.
