Its a great list. A few more ideas are:

-island hopping.

-banaue rice terraces

-shoot the rapids at Pagsanjan Falls

-have some lechon (roast pig on a spit) with the special sauce

-visit Intramuros a preserved colonial town

-ride in a jeepney

-my favourite is to have a cold San Miguel on a hot day

Great list and quite comprehensive; am having a hard time thinking of stuff to add.

I thought the 'Viaje del Sol' item #15 might raise questions. This is a wonderful, wonderful exposure to Philippine culture through a road trip close enough to Manila to do in one or two days. The complete Viaje del Sol experience includes several destinations: restaurants, museums, farms. This is generally in the vicinity of San Pablo, Laguna on to Sariaya, Quezon. Some highlights are Villa Escudero, Ugu Bigyan's pottery studio, and various restaurants and cafes. This is a very nice way of seeing rural Philippines and culture, preserved by people who have a genuine passion for this. Highly recommended and quite easy to do.

To #18 I would add of course Intramuros

To #9 I would add Siargao, surfing mecca of the Philippines

To #25 I would add crossing the Guimaras channel and continuing the food trip in Bacolod, a perfect complement to Iloilo, and making sure one tries Guimaras mangoes, the best in the world

And maybe #26, dolphin/whale watching in Bais Bay, Negros Oriental, plus a hike to Lake Balinsasayao also in Negros Oriental. These twin lakes in the mist shrouded forests high above Dumaguete are unreal, one wouldn't believe a place like this exists in the Philippines.

To #10 one could add Siquijor Island. Apo Island and Camiguin Island.

The first is much larger than Boracay but pristine and has white sand beaches and some coral reefs.

Apo Island, near Dauin and Dumaguete City and also accessible by boat from Siquijor has great scenery and snorkelling with clown fish.

Camiguin Island has volcanic black sand beaches, but the White Beach sandbar is less than 400 metres offshore while Mantique Island is similarly reachable.

All three are pleasant, attractive and not highly commercialised (yet.)
