An Airport Question for 'Tin'

I will have an 8 hour transfer in HK on route to London. There will be no need for me to collect my baggage as this is going to be check right through to London. Am I able to leave the airport during this time to go to Kowloon? If so, how do I go about exiting and re entering customs and immigration?

You need you 1)passport, 2)boarding pass for onward destination for exit/enter of HK customs and immigration.

Yes, that's right. You use passport on arrival similar to a usual visitor to HK, visa not required for such transit by an Australian. Back to the airport, you use your passport and boarding pass for departure.

If you have checked your luggage through to London but not yet obtained the boarding pass for the HK-London leg in Australia, get it at an airline transfer counter before exiting immigration.
