There are lots of things to do. Loads of beautiful hotels depending on your budget. You have the 7 star emirates palace, le meridian, the royal meridian, hilton hotels, sheraton hotels. Depends. Be careful with the Hilton and The Sheraton hotels, they have two hotels in the city so if you want access to the beach book into the corniche hotels. There are lots of malls, a gold souk, a man made island. You can go snorkelling, desert safari.... Lots and lots to do. Depends on what you are interested in.

A list of nice hotels in Abu Dhabi would not be complete without the recently refurbished InterContinental hotel.

do not miss the newly opened Shangri La Hotel. I do not know how it is to stay there, since it is 20 min. drive to down town, but The restaurants and the view of the Sheik Zayed mosque is fantastic esp. at night.

Just spent 2 weeks in AD in March with the family. Great place especially for kids; safe, clean, really nice people. Spent 1 week at the Danat Resort in Jebel Ali; nice small hotel good atmosphere, really good for "beach" hollydys. Then spent 1 week at the Emirates Palace; fantastic hotel; frankly nothing to compare with. Do not expect any cultural activities in AD (except some exibitions at the EP), nothing especially interesting to visit either... Just relax on the beaches or at the pool, do some shopping (Marina Mall is probably the best place) and enjoy the nice weather. That's what hollydays are for; aren't they? People are extremely nice in AD...
