Ed a basic search will show you that even ATM's in Cambodia spit out US dollars. There is n need to worry about any other currency. Instead of cents they will give you the amounts less that $1 in Riel.
Get enough US$ before you go to pay for the Visa and then get the rest out of a money machine as you go along.
US dollars are what you need and take a lot of 1$ bills as they're handy for tipping etc.
I made teh mistake of changing money into Cambodian and the looks I got trying to pay for anything. My hotel bill came to something like $103, asked if they'd take Cambodian, they thought I'd just settle the odd $3, their faces when I drew out about a 6 inch wad of Cambodian was priceless. As has been mentioned $1 is the best thing to carry around with you.
