I'm a musician myself and I share your interest in traditional Moroccan music.

I can comment on Fes as this is where I've spent the bulk of my time. It's as good a place as any to by a guimbri or a "hajouj', but what I've heard is that the best ouds are actually made in Casablanca. There is an oud maker on the Talaa Sghira here in Fes who may be able to sort you out, further down the Talaa near the Der el Rom neighborhood is the music conservatory where you might want to enquire after someone who can help you with instruments. The oud player for the Maison Bleu restaurant (the one in Batha, not to be confused with the Riad of the same name in Derb el-Mitr) is an excellent musician and a few years ago helped a friend purchase a beautiful oud from a maker he knows in Casa.

Chano, thank you very much for the helpful information; I am very interested to learn the oud method with a performance quality instrument. From your experience, is it easy & safe to carry an oud and/or a guimbri aboard a plane as hand-carry item? You see I live in Asia & am planning to visit Spain & Morocco in September. Are ouds also available in Barcelona or Madrid? (sorry about a bit off-topic)...thanks again!
