For Belize, no visa required (assuming you have a USA passport).

Visa requirements would depend on what passport you are using. None the less, www.travelbelize.org will have info on which persons from which countries will require passports or visas, but the ship should have all that info ready for you for all these countries for their passengers
If you are a US citizen all you need is a US passport for the islands/countries you will be visiting.Edited: 9:14 pm, April 09, 2012
Some of the countries only require an original birth certificate and a valid photo ID for US citizens - Mexico and the Cayman Islands being two.
