Where to stay in Belize?

WOW..I've just started researching possible trips to Belize and I can't believe the amount of places to stay. I'm hoping someone can help me with where to stay. Must haves are: Beachfront, beautiful beach/Caribean water, snorkeling at our beach and easy access to swim with Manatees. We're not really looking for a "adventurous vacation" but more relaxing. Some of the people are not at all adventurous when it comes to food so could someone tell me what the food situation is?. Is it at least somewhat comparable to home? I've been to Mexico and Cuba and I know these people wouldn't be able to handle to food. We are sort of considering a condo in Hawaii but my wife really wants to see Manatees. Anyway, any help will be very much appreciated. Hahaha... I'm so overwhelmed.

The highest concentration of the West Indian Manatee would be off Belize City and easy to arrange a boat trip there from Ambergris or Caye Caulker. Many in the Placencia lagoon, where you can much more easily reach by kayak and canoe. Neither of these allow for swimming with manatees, but its not unusual to snorkel in these areas and see and be approached by one
