Probably too late but are you flying into Memphis? If so, make sure you go over to Interstate BBQ before you head south on 61 to start trip! One of Memphis's finest. On MS side of state line, over by I-55, but convenient.
That said, BBQ is so very subjective that, IMO, your best advice may come from asking locals at hole in the wall gas station stores along the way. They always know about off the beaten path, fresh off the chop block, cash only shack type things. Hmmm...my mouth waters now...
Best BBQ I ever had was at one of those shacks along the road in the Greenwood area. Scary-looking place but it was out of this world! I don't remember the name, not sure it had a name, probably isn't there anymore - my point is don't be afraid of the little dives.

Central is an excellent choice. I'd hit the main location on Central.
