Pacific Coast Highway , San Francisco to Santa Monica

As part of our USA Vacation in October ( Coming from UK to celebrate our 25th wedding anniversary) we are driving down the PCH between San Francisco and Santa Monica. We are driving over 3 days (2 nights) and staying overnight in Monterey and Santa Barbara. Can anyone point out any 'must-see' locations on our trip. We wont have hours to spend on major attractions like 'Hearst Castle' but we dont to drive past anything worthy of a quick visit and regret it later.....thanks

Here's a short list of quick stops/must see's on the drive through Big Sur:

Bixby Bridge

McWay Falls at Julia Pfeiffer Burns State Park

Elephant Seal Rookery at Piedras Bancas

Point Lobos State Reserve is worth a few hours. It's been coined as ... The greatest meeting of land sea"... It has easy to walk trails overlooking coves, pinnacles jutting out of the sea, abundant wildlife and an unusual orange moss that drips off the trees on the Cypress Grove Trail.

Monterey to Santa Barbara via Highway 1 is about a 5 1/2 - 6 hour drive without stops.
