Yes, there's this one: http://www.hobarthistorictours.com.au/

There's also what's called a "ghost" tour that operates from Salamanca Bakery in the evening, but it has a historic focus.

And Louisa's walk operating from Cascade Brewery has a historic focus, but not so much on the architecture of the city as doesn't go that far. http://livehistoryhobart.com.au/

Best one is the Launceston Historic Walk if you get up there. The old architecture in Launceston is far more intact than in Hobart: 1842.com.au/launceston_historic_walks.html
