No visa requirements that I'm aware of so you'd only need to go through customs and immigration.

I hear the government recently put a freeze on the usual Departure Tax so I don't think it would cost you anything if you 'arrived in' and 'departed from' Australia.

Yes Mark even Europeans, the only country exempt from needing a visa are New Zealanders because of an agreement between our two countries. As for not needing a visa for New Zealand, it a completely different country to Australia, we don't have the same rules. If you are here less than 72 hours you may be able to get a transit visa instead of a tourist visa, but you still need to get one to even land in the country. The link posted above will give you all the info you need and you can apply for it on that website.

Australia and New Zealand have completely different visa regimes.

If you are travelling on an Italian passport, you can apply for a evisitor. You can apply online, and they are free.

Departure taxes are always built in to the cost of your ticket, so your carrier has likely paid $40 departure tax to the Australian government. If you remain in the transit area, and don't enter Australia, and your carrier has paid this tax, you should be entitled to a refund. Talk to your carrier. If you enter, and stay overnight at a hotel, then you won't be entitled to any refund, and your carrier will collect the tax as part of the ticket price.
