Location may be too far but away since they're based out of Buonconvento - but it's just what you describe and worth a look (and Lesley is a delight to work with)
I suggest you contact Mrs Natalie of the Valtiberina Tos (Consorzio Per La Valorizzazione Del Territorio Della Valtiberina Tos)
and tell her what you need.
Otherwise try with the Pro Loco (Tourism Office) of Sansepolcro - a nearby town:
Piazza Garibaldi, 4

Another good possibility is Elisa Berghi www.greve-in-chianti.com/elisa.htm She does traditional dishes but also some really great "modern" (meaning lighter) Tuscan dishes.
