Can anyone recommend any local scenery like the waterfalls I see in the pictures of and around Bergen?
Any boat or kayaking trips through fjords... Any recommendations on how to go about this?

Mid November is winter - there won't be any offers of kayaking etc. as it is too cold for most people, only very experienced kayakers with dry suit and own equipment will be out

No, Oslo would be in the wrong part of Norway for that kind of scenery.
In Oslo you can go by ferry to one of the islands or to Nesodden, to see Oslo from the fjord
