I'm writing a book about collagen, elastin and the prevention of common ailments (including cancer and diabetes). The Greek soup, POTHI, made from boiled-down cow's feet, is supposed to be very nutritious. It is probably full of collagen and/or elastin. For the sake of research, I should try it while in Athens. Your experienced comments or suggestions will be greatly appreciated. This is not a joke!
